Ingredients

Scale

For the Muffins:

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 tablespoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon nutmeg (optional)

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1/3 cup vegetable oil (or melted butter)

  • 2 large eggs

  • 1 teaspoon vanilla extract

For the Cinnamon Sugar Topping (Optional):

  • 2 tablespoons granulated sugar

  • 1/2 teaspoon ground cinnamon

  • 2 tablespoons melted butter

Instructions

1. Preheat the Oven:

Preheat to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

2. Mix the Dry Ingredients:

In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.

3. Mix the Wet Ingredients:

In another bowl, whisk together milk, oil, eggs, and vanilla extract until combined.

4. Combine:

Pour the wet ingredients into the dry and stir just until combined. Do not overmix — a few lumps are okay.

5. Fill the Muffin Tin:

Divide the batter evenly among the muffin cups, filling each about 2/3 full.

6. Bake:

Bake for 15–18 minutes, or until a toothpick inserted into the center comes out clean. Let cool slightly.

7. Add Cinnamon Sugar Topping (Optional):

While muffins are still warm, brush the tops with melted butter and sprinkle with cinnamon sugar.

Serving Suggestions:

  • Serve warm with coffee, tea, or milk

  • Add a pat of butter or a drizzle of honey for extra indulgence

  • Perfect as a grab-and-go breakfast

Notes

Pro Tips:

  • Don’t overmix the batter — it makes the muffins dense

  • For extra cinnamon flavor, add a swirl of cinnamon sugar into the batter before baking

  • Use buttermilk instead of regular milk for a slight tang and tender texture

Common Mistakes to Avoid:

  • Overbaking – check early to avoid dry muffins

  • Using cold ingredients – bring eggs and milk to room temperature for better mixing

  • Filling muffin cups too much – this can cause overflow

Storage Instructions:

  • Store in an airtight container at room temp for up to 3 days

  • Refrigerate for up to 5 days

  • Freeze for up to 2 months — reheat in microwave or oven before serving

Enjoy your Cinnamon Muffins — warm, fluffy, and spiced just right!
