Cinnamon Coffee Cake is a soft, buttery cake layered with cinnamon sugar and topped with a rich, crumbly streusel topping. It’s the ultimate comfort bake, made to pair perfectly with your morning coffee or tea.
For the Cake:
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup sour cream (or plain Greek yogurt)
2 tsp vanilla extract
For the Cinnamon Sugar Layer:
1/2 cup light brown sugar, packed
2 tsp ground cinnamon
For the Streusel Topping:
1/2 cup all-purpose flour
1/3 cup light brown sugar
1 tsp ground cinnamon
1/4 cup unsalted butter, cold and cubed
Pinch of salt
Preheat your oven to 350°F (175°C). Grease a 9×9-inch pan (or 8×8 for thicker slices) and line with parchment if desired.
Mix the brown sugar and cinnamon in a small bowl. Set aside.
In another bowl, mix flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a fork or pastry cutter until crumbly. Chill until ready to use.
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Mix in sour cream. Gradually add dry ingredients until just combined — don’t overmix.
Spread half the batter into the prepared pan. Sprinkle with the cinnamon sugar mixture. Add the remaining batter and gently smooth the top. Sprinkle the streusel topping evenly over the batter.
Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. Cool in the pan before slicing.
Serve warm with coffee or chai
Add a light drizzle of vanilla glaze or dust with powdered sugar
Pairs great with fruit or a dollop of whipped cream
Use room-temperature ingredients for the best texture
Double the cinnamon sugar layer if you love extra spice
Want a taller cake? Bake it in a loaf pan and extend the bake time
Overbaking – check at 35 minutes to avoid a dry cake
Skipping the sour cream/yogurt – it keeps the cake super moist
Using warm butter in streusel – it won’t crumble right
Store covered at room temp for 2–3 days
Refrigerate for up to 5 days
Freeze individual slices for up to 2 months
Reheat in microwave for 15–20 seconds for fresh-from-the-oven taste
