Instructions

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9×9-inch pan (or 8×8 for thicker slices) and line with parchment if desired.

2. Make the Cinnamon Sugar Layer:

Mix the brown sugar and cinnamon in a small bowl. Set aside.

3. Make the Streusel Topping:

In another bowl, mix flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a fork or pastry cutter until crumbly. Chill until ready to use.

4. Prepare the Cake Batter:

In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla. Mix in sour cream. Gradually add dry ingredients until just combined — don’t overmix.

5. Layer the Cake:

Spread half the batter into the prepared pan. Sprinkle with the cinnamon sugar mixture. Add the remaining batter and gently smooth the top. Sprinkle the streusel topping evenly over the batter.
