Cinnamon Coffee Cake Muffins are fluffy and tender with a swirl of cinnamon sugar and a golden crumb topping. They’re everything you love about coffee cake — in convenient, individual portions perfect for breakfast, snacks, or brunch!

For the Muffins:

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1/4 cup brown sugar

  • 2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 cup unsalted butter, melted and slightly cooled

  • 1 cup sour cream or Greek yogurt

  • 2 large eggs

  • 2 tsp vanilla extract

For the Cinnamon Swirl:

  • 1/4 cup brown sugar

  • 1 1/2 tsp ground cinnamon

For the Crumb Topping:

  • 1/3 cup brown sugar

  • 1/3 cup all-purpose flour

  • 1 tsp ground cinnamon

  • 3 tbsp unsalted butter, cold and cubed

Instructions

1. Preheat the Oven:

Preheat to 375°F (190°C). Line a muffin tin with paper liners or grease well.

2. Make the Cinnamon Swirl & Crumb Topping:

In a small bowl, mix the swirl ingredients: brown sugar and cinnamon.
In another bowl, mix crumb topping ingredients and cut in the cold butter until crumbly. Set both aside.

3. Prepare the Muffin Batter:

In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, and cinnamon.
In another bowl, mix melted butter, sour cream, eggs, and vanilla until smooth.
Pour wet ingredients into dry and stir just until combined — don’t overmix.

4. Layer the Muffins:

Spoon a tablespoon of batter into each muffin cup. Sprinkle with cinnamon swirl mixture. Add remaining batter on top. Sprinkle each muffin with crumb topping.

5. Bake:

Bake for 18–22 minutes, or until a toothpick comes out clean. Cool in pan for 5 minutes, then transfer to a rack.
