For the Banana Cake:

  • 2½ cups all-purpose flour

  • 1 tbsp baking powder

  • 1 cup mashed ripe bananas (about 3 medium)

  • 1 cup buttermilk

For the Pudding Soak:

  • 2 boxes (3.4 oz each) instant banana pudding mix

  • 3 cups cold whole milk

  • ½ cup sweetened condensed milk

For Assembly:

  • 2 cups heavy whipping cream

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

  • 23 ripe bananas, sliced

  • 1½ cups vanilla wafer cookies, crushed

  • Whole vanilla wafers for garnish

Instructions

1. Bake the Cake Layers:

  • Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.

  • Whisk together flour, baking powder, baking soda, and salt.

  • Cream butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.

  • Alternate adding dry ingredients with bananas and buttermilk.

  • Divide batter evenly among pans. Bake 25-30 minutes until golden.

  • Cool completely on wire racks.

2. Prepare Pudding Soak:

  • Whisk pudding mixes with milk for 2 minutes until thick. Stir in condensed milk.

3. Assemble the Cake:

  • Place first cake layer on serving plate. Poke holes over surface with a skewer.

  • Spread ⅓ of pudding over cake. Top with banana slices and crushed wafers.

  • Repeat with remaining layers. Chill cake 1 hour before frosting.

4. Make Whipped Cream Frosting:

  • Beat heavy cream, powdered sugar and vanilla to stiff peaks.

  • Frost entire cake with whipped cream.

  • Decorate with whole vanilla wafers and banana slices.
