This Baileys Soft Serve is silky, smooth, and packed with the rich, creamy flavor of Baileys Irish Cream. No ice cream machine? No problem — you can make it with or without one! It’s the perfect adults-only treat for warm days or cozy evenings.

Ingredients

Scale

For the Soft Serve Base:

  • 1 ½ cups heavy cream

  • 1 cup whole milk

  • ¾ cup sweetened condensed milk

  • ½ cup Baileys Irish Cream

  • 1 teaspoon vanilla extract

  • Pinch of salt

Optional Add-Ins:

  • Mini chocolate chips

  • Espresso powder (for a mocha twist)

  • Chocolate or caramel swirl

Instructions

1. Mix the Base:

In a large mixing bowl, whisk together the heavy cream, milk, sweetened condensed milk, Baileys, vanilla, and a pinch of salt until smooth.

2. Chill the Mixture:

Cover and refrigerate for at least 2–3 hours, or until the mixture is very cold. This helps with smooth texture and better churning.

3. Churn (Ice Cream Maker Method):

Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20–25 minutes, until soft-serve consistency is reached.

4. No Ice Cream Maker Method:

Whip the heavy cream separately until soft peaks form. Gently fold in the rest of the ingredients. Pour into a loaf pan or airtight container and freeze for 6–8 hours, stirring every 1–2 hours for a creamier texture.

5. Serve:

Scoop or pipe into a cone or dish. For a true soft-serve vibe, let it sit out for 5–10 minutes before serving if frozen solid.

Serving Suggestions:

  • Drizzle with chocolate syrup or Baileys-spiked ganache.

  • Top with crushed Oreos, chocolate shavings, or toffee bits.

  • Serve in waffle cones or as an adult affogato over espresso.

Notes

Pro Tips:

  • Use cold ingredients for faster churning and smoother texture.

  • Add a tablespoon of vodka to prevent over-hardening if freezing long term.

  • Double the Baileys for a stronger flavor — just reduce milk slightly.

Common Mistakes to Avoid:

  • Using low-fat dairy – you need the fat for creamy texture.

  • Adding Baileys too early when whipping cream (no-churn) – it can prevent proper peaks.

  • Freezing too long without stirring (no-churn) – can get icy.

Storage Instructions:

  • Store in an airtight container in the freezer for up to 1 week.

  • Press plastic wrap or parchment directly on the surface to prevent ice crystals.

  • Soften at room temp for 5–10 minutes before serving if frozen solid.
