Wet Ingredients:

  • ½ cup unsalted butter, melted (or coconut oil)

  • ½ cup brown sugar

  • ¼ cup honey or maple syrup

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup unsweetened applesauce

Mix-ins:

  • 1 cup grated carrots (about 2 medium)

  • 1 cup finely diced apple (about 1 medium)

  • ½ cup chopped walnuts or pecans (optional)

  • ¼ cup raisins or dried cranberries (optional)

Topping (Optional):

  • 2 tbsp rolled oats + 1 tbsp brown sugar

Instructions

1. Prep & Mix Dry Ingredients:

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.

  • In a large bowl, whisk together both flours, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

2. Combine Wet Ingredients:

  • In another bowl, whisk melted butter, brown sugar, honey, eggs, vanilla, and applesauce until smooth.

3. Make the Batter:

  • Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).

  • Fold in grated carrots, diced apple, nuts, and raisins (if using).

4. Bake the Muffins:

  • Divide batter evenly among muffin cups (they should be nearly full).

  • Sprinkle with oats and brown sugar topping if desired.

  • Bake for 18-22 minutes, or until a toothpick comes out clean.

  • Cool in pan for 5 minutes, then transfer to a wire rack.
