Instructions

  • In another bowl, whisk coconut oil, brown sugar, and molasses. Add eggs, vanilla, and yogurt.

3. Make the Batter:

  • Fold dry ingredients into wet until just combined.

  • Stir in carrots, apple, fresh ginger, and nuts.

4. Bake:

  • Divide batter among cups (fill to top). Sprinkle with cinnamon sugar if using.

  • Bake 18-22 minutes until golden. Cool 5 minutes before removing.
